Day 321: A year from today...

While scrolling through my Pinterest feed I stumbled across this lovely quote!

How many things do we say daily that we tell ourselves we need to start doing? 

Dieting, Exercising, Breaking a Bad Habit, Being Better at Something...the list is endless. And this quote sums it up beautifully! "A year from now, you'll wish you started today."

In college I was disicpled by a sorority sister who was head over heels in love with God. It was her daily goal to serve him and still is now more than ever. She always said something that stuck with me and I quote to people today: "Be the woman you want to be at 50 at 20." She always encouraged us that if we wanted to be in God's word daily, we start today. If it was a goal to be an organized wife and mother, to be organized today. Her advice is so true, as is this quote. We need to be the person we want to be starting today!

Day 319: Southerness is Close to Godliness

Fact: There is NOTHING like the South.

I knew that moving North of the Mason-Dixon line would be different, but by gosh it’s another world up here. You would think that just across the Ohio River or an imaginary line that was developed long ago would be so defining –but it is. People aren’t quite…how should I saw it, hospitable. And bless their hearts, they sure don’t know what good cookin’ is if it fell from the sky. Let’s not EVEN mention there’s nothing sweeter than a southern accent…those are few and far between in these neck of the woods. 

Today we got into one of our many discussions about my southern ways. After we get through the way I say pie {pronounced PIIIIIE}, we always find our way to the subject of food. This topic never ceases to amaze me! I don’t know how these folk survive. Involved in our conversation today was a new fella in training from Northern Iowa. As we got deeper into the conversation about the way HE said things like Agriculture {his pronunciation: Eggriculture}, I quickly learned he had never eaten at a Cracker Barrel or heard of the southern delicacies of Derby Pie or Coca-Cola Cake! Unbelievable!

So tonight I made it my duty to show this boy what Paula Dean means by EVERYTHING is better with Butter! I have never made a Coca-Cola Cake before, but I sure have eaten my fair share! I dug up a recipe and whipped up these northern guys some REAL food!


This post would not be complete without giving you the delicious recipe for my favorite dessert - Coca-Cola Cake!  
So, get in the kitchen and bake you up a southern slice of heaven!

Ingredients:
2 cups self-rising flour
2 cups sugar
3 tablespoons cocoa
1 cup Coca-Cola
1 cup butter
1 1/2 cups miniature marshmallows
2 eggs, beaten
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract

Frosting:
1/2 cup butter
1 tablespoon cocoa
6 tablespoons Coca-Cola
1 box confectioner's sugar, (1pound)
1/2 cup chopped pecans
Preparation:Grease and flour a 9 x 13-inch pan and set aside.
In a large bowl combine flour and sugar. 

In a saucpan combine the cocoa, Coca-Cola, butter, and marshmallows; bring to a boil. 

Combine the boiled mixture with the flour and sugar mixture.
In a separate bowl mix eggs, buttermilk, baking soda, and vanilla; add to the first mixture. 

Pour into prepared pan and bake at 350 degrees for about 35 minutes, until cake tests done.
Frosting
In a saucepan, bring butter, cocoa, and Coca-Cola to a boil. 

Stir in the sugar and mix well. Stir in nuts. 

Spread over the cake while both cake and frosting are still warm.
Serves about 16.

Day 318

Loving It Wednesday!

Today I am going to share a product that I am loving at the moment!

Bobby Pins. They are EVERYWHERE.... around the house, my car, work desk, you name somewhere I have been in the past few hours and I am sure you won't be searching too far for a bobby pin. That's why this year Santa tried to fix me up!

I saw there were only four and I was a little skeptical, I mean have you SEEN how thick my hair is?!
But it was definitely worth a try...



...would you believe me if I said it only took one Goody Mindy Bobby Pin {on each side of course}to get this look? Maybe! But how about that this picture was taken almost 12 hours after they were FIRST put in? That's right! These little sliders lasted me ALL day..without even so much as a redo.
 Oh the power of one....now if I can only keep track of them!

Day 315 - New Year, New Look!

2012 was great…one of my favorites for sure, but 2013 is well underway and I am betting that it will be an even better one. 
In order to usher out the old and bring in the new, I am renovating my space here in the corner of the world wide web! In addition to a fabulous new clean look from Designer Blogs, I also have an awesome new signature from Melissa Rose Designs for all my new posts. I am thankful for all my current followers who have joined me on the Photo365 Challenge and I hopeful for more followers as this year I have set a goal to share more about my life. Through the photo challenge I learned that I take a lot of photos of food, Luke, and my home –But hey, isn’t that what being a newlywed is all about?! 
For 2013, I want to share about me and my experiences as a not-so-newlywed. I get so inspired by reading about other’s people’s lives on their blogs and I want to do that for someone too. 
So, as a new year begins, new goals are made and of course a new look is necessary!

Day 310 - WW Begins!


Smart One's for Lunch

Yesterday I picked up Weight Watchers again. I lost quite a bit of weight my last semester in college in preparation for the wedding on weight watchers and as I prepare for my best friend’s wedding in five short months…it’s time to shed a few newlywed pounds. Losing weight is NEVER easy, but there are a couple helpful hints that keep me on track.
  • Encouragers – Just like a lot of other things is life, a faithful encourager is a key part of looking weight. And I am not talking about those people who talk about how much they work out or the ones that count every calorie they put into their mouth. I am talking about the ones who understand what you’re going through – and most likely are working at it with you. My husband is a great and encourager in my life, but not for losing weight –I swear that boy is NEVER full and doesn’t gain a pound. So choosing a close friend who understands what I am going through was necessary. My friend and I started on the same day and –via text- wine and cry about our chocolate neglect. It’s perfect. Having someone who keeps you accountable and encourages you is one of the most important aspects of a successful weight loss program.
  • Plan AHEAD! – I know that this one is obvious, but it’s so critical. When I know what I am going to eat, I stay on track. It’s those days that I say “Oh I will just find something” that I always slip up. My secret to success: always keep a smart ones in the freezer, a clementine or apple in the fridge, and some almonds in my purse. Also along the lines of planning ahead is know the points value of your meals and snacks BEFORE you eat them. Don’t get into the habit of saying “It can’t be that much” –it CAN. A great example that I live out is sticking to portion sizes by preparing them in advance. For example, as soon as you get home from the grocery, count out a serving and bag it individually. I will never forget my roommates in college helping me bag pretzel sticks into little baggies so that I wouldn’t eat more than I was supposed to. 

There are a ton of other helpful hints, but the most important thing I preach to myself daily is that I didn’t gain it in a day, so I won’t lose it in a day. If you’re traveling along this weight loss journey too, you’re not alone.

Frankly my dear…we will be skinny in NO time!
