What’s better than pink, strawberry cupcakes with the most delicious frosting you’ve ever tasted?!
For real though…I made these scrumptious cupcakes for Luke to take to work & the women he works with have been dying for the recipe! SO, today I am sharing all the secrets…just in time for you to whip them up for Mom (or yourself)!
When I decided to make these cupcakes I wasn’t really prepared. I had about three hours AND I had to go grocery shopping. Needless to say I ended up cheating on the cupCAKE part & used a box! I knoowwww…that’s one of the seven deadly blogger sins but I do have a handy tip to use when you’re crunched for time. Instant Pudding. I know you think I’ve really lost it now, but adding a box of instant pudding powder to the cake mix + an extra egg gives you that same moistness you get from homemade cakes….with lots more time to make the perfect frosting!!
Ingredients
1/2 Cup Whole Strawberries
1 stick butter
1 8 oz. package of cream cheese, room temperature
1/2 tsp. vanilla extract
22 oz. Powdered Sugar
Directions
In a food processor, process strawberries until purred. Set aside.
Using an electric mixer, beat butter on medium speed until it is light & fluffy.
Add cream cheese & beat until well combined.
Slightly reduce mixer speed & begin adding in the powdered sugar slowly. Continue to beat until all ingredients are well combined.
Add in your vanilla & 3 tbs. strawberry puree. If you are a real strawberry lover, add a bit more & save the rest for later!
Mix until everything is well blended & fluffy.
Place your frosting in the refrigerator to thicken up before piping your cupcakes.
Garnish with a strawberry to add that extra detail!
I lined mine up in a cupcake box & kept in them in the refrigerator for Luke to take to work. My personal opinion was that the frosting was most tasty coming from the cold refrigerator. I’ll be honest though, I love this frosting so much, I’d eat it right out of the bowl! ha!
Just a side note, this is my version of Martha’s original recipe that you can find here. Another tip I would have is that if you’re in search of a more gluten friendly, version you may research your local grocery for alternative cake ingredients!
